One-Pot Greek Lentil Soup

Ingredients

  • 500g whole green lentils
  • 2 cups cold water
  • 1 onion, diced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1 x 400g can tomatoes
  • 1 clove garlic, thinly sliced
  • 3 bay leaves
  • 1/2 cup extra virgin olive oil
  • 2.5 tablespoons white vinegar
  • Salt and pepper to taste

Preparation

  1. Place everything in a pot and bring it to the boil, then put the lid on and let it simmer for 25-35 minutes.

  2. During the simmering process towards the end, it may absorb a lot of the water; add another 1/2 cup water to prevent it from getting too mushy.

  3. Let it cool, add a little splash of extra olive oil on top, and serve it with some crusty bread.
