One-Pot Greek Lentil Soup
Ingredients
- 500g whole green lentils
- 2 cups cold water
- 1 onion, diced
- 1 celery stalk, diced
- 1 carrot, diced
- 1 x 400g can tomatoes
- 1 clove garlic, thinly sliced
- 3 bay leaves
- 1/2 cup extra virgin olive oil
- 2.5 tablespoons white vinegar
- Salt and pepper to taste
Preparation
Place everything in a pot and bring it to the boil, then put the lid on and let it simmer for 25-35 minutes.
During the simmering process towards the end, it may absorb a lot of the water; add another 1/2 cup water to prevent it from getting too mushy.
Let it cool, add a little splash of extra olive oil on top, and serve it with some crusty bread.
