Simple Vegetable Khichdi with Spices and Lentils

Ingredients

  • 1 onion
  • 2 carrots
  • 1 large courgette
  • 1 large garlic clove
  • 1 tsp ginger paste
  • 2 tsp curry powder
  • 1 tsp mixed herbs
  • 1/2 tsp chilli flakes
  • 1 tsp turmeric
  • A pinch of salt and pepper
  • 1 and 1/4 cup rice
  • 3/4 cup red lentils
  • 5 cups water

Preparation

  1. Soak the red lentils in hot water for 15 minutes.

  2. Add the onion, carrots, and courgette to a large pan and cook until they start to brown.

  3. Add the ginger paste, spices, herbs, salt, and pepper to the pan and mix in. Cook for a minute.

  4. Add the rice to the pan and cook for 3-4 minutes, stirring regularly.

  5. Add the lentils and water to the pan and simmer for 20-30 minutes. Add more water if needed and stir occasionally.
