Simple Vegetable Khichdi with Spices and Lentils
Ingredients
- 1 onion
- 2 carrots
- 1 large courgette
- 1 large garlic clove
- 1 tsp ginger paste
- 2 tsp curry powder
- 1 tsp mixed herbs
- 1/2 tsp chilli flakes
- 1 tsp turmeric
- A pinch of salt and pepper
- 1 and 1/4 cup rice
- 3/4 cup red lentils
- 5 cups water
Preparation
Soak the red lentils in hot water for 15 minutes.
Add the onion, carrots, and courgette to a large pan and cook until they start to brown.
Add the ginger paste, spices, herbs, salt, and pepper to the pan and mix in. Cook for a minute.
Add the rice to the pan and cook for 3-4 minutes, stirring regularly.
Add the lentils and water to the pan and simmer for 20-30 minutes. Add more water if needed and stir occasionally.
