Spicy Lentil and Pumpkin Nourish Bowl

Ingredients

  • delica pumpkin
  • 1/2 can lentils
  • pizza sauce
  • medium hot sauce
  • sweetcorn on the cob
  • edamame
  • carrots
  • crispy fried onions
  • ketchup

Preparation

  1. Bake delica pumpkin for about 1 hour with the skin on, then chop into cubes and chill in the fridge.

  2. Sauté 1/2 can of lentils in pizza sauce and medium hot sauce.

  3. Air fry sweetcorn on the cob at 190°C for 14 minutes.

  4. Prepare edamame and carrots as desired.

  5. Add crispy fried onions and ketchup to the nourish bowl assembly.

  6. Note: This variety of pumpkin has a high sugar content and tastes like caramel when cooked perfectly; highly recommend using delica pumpkin for best results.
