Spicy Lentil N Pumpkin Nourish Bowl

Ingredients

  • baked delica pumpkin (about 1 hour, keep the skin on it’s delicious & then chill in the fridge) + chopped into cubes
  • 1/2 can lentils, sautéed in pizza sauce + medium hot sauce
  • air fried sweetcorn (place the cob in an air fryer at 190°C for 14 mins)
  • edamame
  • carrots
  • crispy fried onions (current obsession)
  • ketchup
