Spicy Lentil and Pumpkin Nourish Bowl
Ingredients
- delica pumpkin
- 1/2 can lentils
- pizza sauce
- medium hot sauce
- sweetcorn on the cob
- edamame
- carrots
- crispy fried onions
- ketchup
Preparation
Bake delica pumpkin for about 1 hour with the skin on, then chop into cubes and chill in the fridge.
Sauté 1/2 can of lentils in pizza sauce and medium hot sauce.
Air fry sweetcorn on the cob at 190°C for 14 minutes.
Prepare edamame and carrots as desired.
Add crispy fried onions and ketchup to the nourish bowl assembly.
Note: This variety of pumpkin has a high sugar content and tastes like caramel when cooked perfectly; highly recommend using delica pumpkin for best results.
