Baked Apple Fritters
Ingredients
- 1 1/2 cups self-rising flour (or 1 1/2 cups all-purpose flour + 2 tsp baking powder, 1/4 tsp salt)
- 3 tbsp butter, room temp (diced into small pieces)
- 2 eggs (1 for batter, 1 for egg wash)
- 1/3 cup sugar
- 1 granny smith apple, peeled & finely diced
- 1 tsp cinnamon
- 3/4 cup powdered sugar (for glaze)
- 2 tbsp milk (of choice, for glaze)
- 1/2 tsp vanilla (for glaze)
Preparation
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with a silicone liner or parchment paper.
In a large mixing bowl, whisk together the self-rising flour and sugar. Cut in the room temperature butter until the mixture resembles coarse crumbs.
In a separate bowl, whisk together 1 egg, cinnamon, and milk. Pour this mixture into the flour mixture and stir until well combined. Gently fold in the finely diced granny smith apple.
Using a 1/4 heaping cup measurement, scoop the batter and form 6 fritters on the prepared baking sheet.
Whisk the remaining egg and brush each fritter with the egg wash.
Bake the fritters in the preheated oven for 13-15 minutes or until they are golden brown and cooked through. Allow them to cool.
In a small bowl, prepare the glaze by mixing powdered sugar, milk, and vanilla until smooth.
Once the fritters have cooled, drizzle the glaze over the top.
