Baked Gluten-Free Raspberry Donuts

Ingredients

Donut base

  • 1 1/2 cups gluten-free flour (Bob's Red Mill)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup raspberries
  • 1/3 cup blended coconut sugar and monk fruit sweetener (Florida Crystals and Lakanto)
  • 1/4 cup coconut oil (Trader Joe's)
  • White chocolate chips (Nestle Toll House)

Glaze

  • 2 raspberries
  • Almond milk (New Barn Organics)
  • Powdered sugar

Preparation

  1. Preheat oven to 350 degrees

  2. Mix dry ingredients

  3. Mix wet ingredients, then add to dry ingredients

  4. Spray donut tray with olive oil and scoop mixture into tray or form your own

  5. Bake at 350 for 12-15 minutes

  6. Let cool

  7. Create glaze using the ingredients and drizzle on top

  8. Optionally, chill in fridge to cool faster
