Vegan Banana Bread with Blueberries and Dates

Ingredients

  • 4 ripe bananas
  • 3 cups oat flour
  • 1/2 cup ground walnuts
  • 1 tbsp baking soda
  • 2.5 cups soy milk
  • handful of blueberries
  • some finely chopped dates

Preparation

  1. Preheat oven to 160C

  2. Mash bananas and blend with all ingredients except blueberries

  3. Line a tray with baking paper and pour mix in

  4. Top with blueberries and/or any seeds or nuts you want

  5. Bake at 160C for 40 minutes

  6. Rest for an hour before slicing
