Gluten-Free Banana Bread Muffins

Ingredients

  • 8-9 ripe baby bananas
  • 1/2 cup sparkling water
  • 1 cup teff flour
  • 1 cup crushed walnuts
  • 1 cup dried mulberries
  • 1/4 cup goji berries

Preparation

  1. Mash 8-9 really ripe baby bananas.

  2. Add 1/2 cup sparkling water.

  3. Add 1 cup teff flour and mix together with a spoon.

  4. Add about 1 cup crushed walnuts.

  5. Add 1 cup dried mulberries (you can rehydrate them first if desired).

  6. Add about 1/4 cup goji berries or use any other sweet berries.

  7. Bake in a preheated iron muffin pan at 450 degrees for about 20 minutes. This should make approximately 12 small muffins.
