Gluten-Free Banana Bread Muffins
Ingredients
- 8-9 ripe baby bananas
- 1/2 cup sparkling water
- 1 cup teff flour
- 1 cup crushed walnuts
- 1 cup dried mulberries
- 1/4 cup goji berries
Preparation
Mash 8-9 really ripe baby bananas.
Add 1/2 cup sparkling water.
Add 1 cup teff flour and mix together with a spoon.
Add about 1 cup crushed walnuts.
Add 1 cup dried mulberries (you can rehydrate them first if desired).
Add about 1/4 cup goji berries or use any other sweet berries.
Bake in a preheated iron muffin pan at 450 degrees for about 20 minutes. This should make approximately 12 small muffins.
