Banana Cinnamon Palmiers: Sweet Baked Delight
Ingredients
- 1 sheet ready-rolled puff pastry
- 3 medium bananas or 2 large ones
- 1 1/2 tsp ground cinnamon
- 1 tbsp brown sugar
- Optional: 1 tsp icing sugar
Preparation
Preheat the oven to 180°C (350°F).
Mash the bananas, leaving some texture. Mix in the ground cinnamon and brown sugar.
Roll out the puff pastry and spread the banana mixture evenly over it, going up to the edges.
Mark the halfway point on each of the shorter sides of the pastry.
Fold the pastry onto itself up to the marked halfway point on both sides.
Fold it over itself again lengthways.
Roll the pastry up in the paper it came in and freeze it for 1 1/2 to two hours.
Remove from the freezer and slice into approximately 1cm wide slices.
Arrange the slices on baking sheets, leaving enough space for expansion. You might need three baking trays.
Sprinkle icing sugar on top of the palmiers.
Bake for about 18 minutes or until they turn golden brown.
Allow the palmiers to cool before enjoying.
These palmiers are best enjoyed on the day they are made but can last for a few days in an airtight container.
