Blueberry and Cashew Butter Hemp Seed Breakfast Bars
Ingredients
- 1/2 cup cashew butter
- 1 cup unsweetened non-dairy milk
- 2 tablespoons maple syrup
- 1/2 cup blueberries fresh or frozen
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- pinch of salt
- 1/2 cup cashew butter to swirl on top of hemp mixture
- 1 cup blueberries fresh or frozen
Preparation
Preheat the oven to 350° & line a 8×8 pan with parchment paper
In a large bowl combine all of your hemp seed breakfast bar ingredients, except the topping ingredients
Stir until the mixture becomes really fluffy & well combined
Pour mixture into your pan
Using a spoon drizzle the 1/2 cup cashew butter over top the breakfast bars
Using a knife, swirl the cashew butter into the hemp seed bake then add blueberries on top of the bake
Bake for 30-35 minutes, until the center of the breakfast bake is set completely
Cool completely, cut into 9 squares & drizzle with maple syrup
Store leftovers in fridge covered for 5 days
To reheat, place in toaster oven or microwave and then drizzle with maple syrup
