Blueberry and Cashew Butter Hemp Seed Breakfast Bars

Ingredients

  • 1/2 cup cashew butter⁣⁣
  • 1 cup unsweetened non-dairy milk ⁣
  • 2 tablespoons maple syrup⁣⁣
  • 1/2 cup blueberries fresh or frozen⁣⁣
  • 1 teaspoon cinnamon⁣⁣
  • 1/2 teaspoon ground ginger⁣⁣
  • pinch of salt⁣⁣
  • 1/2 cup cashew butter to swirl on top of hemp mixture⁣⁣
  • 1 cup blueberries fresh or frozen⁣⁣

Preparation

  1. Preheat the oven to 350° & line a 8×8 pan with parchment paper

  2. In a large bowl combine all of your hemp seed breakfast bar ingredients, except the topping ingredients

  3. Stir until the mixture becomes really fluffy & well combined

  4. Pour mixture into your pan

  5. Using a spoon drizzle the 1/2 cup cashew butter over top the breakfast bars

  6. Using a knife, swirl the cashew butter into the hemp seed bake then add blueberries on top of the bake

  7. Bake for 30-35 minutes, until the center of the breakfast bake is set completely

  8. Cool completely, cut into 9 squares & drizzle with maple syrup

  9. Store leftovers in fridge covered for 5 days

  10. To reheat, place in toaster oven or microwave and then drizzle with maple syrup
