Cherry Chocolate Stracciatella Layer Cake
Ingredients
Biscuit
- 4 large eggs
- 120 g sugar
- 100 g all-purpose flour
- 30 g cocoa powder
- 1/2 teaspoon baking powder
Cream
- 600 g heavy cream
- 2 packets whipped cream stabilizer
- 2 packets vanilla sugar
- 200 g dark chocolate shavings
- 1 (380 g) jar pitted cherries, drained
Glaze and decoration
- 350 ml cherry juice (from the jar of cherries)
- 2 packets red dessert glaze mix
- 3 tablespoons sugar
- 150 g dark chocolate shavings
- a few fresh cherries, for decoration
Preparation
Preheat the oven to 180 degrees Celsius. Line a 26 cm springform pan with parchment paper. Separate the eggs, beat the egg whites and gradually add the sugar until a stable meringue forms. Fold in the egg yolks.
Sift the flour, cocoa powder, and baking powder and fold into the biscuit batter. Pour the batter into the prepared pan and bake for 25 minutes. Let cool completely, then cut horizontally in half.
Place the heavy cream in a bowl, add the whipped cream stabilizer and vanilla sugar while stirring. Whip the cream slowly until stiff. Gently fold in the chocolate shavings and refrigerate.
Drain the cherries in a sieve, reserving the juice for the cherry glaze, and set aside. Place one chocolate biscuit layer on a plate and place a cake ring around it. Spread 4 tablespoons of the cream on the layer and arrange the cherries on top. Spread two-thirds of the remaining cream in a dome shape over the cherries.
Place the second chocolate biscuit layer on top and press down slightly at the edges. Spread the remaining cream over the top biscuit layer. Chill the cake for 1 hour, then place in the freezer for 20 minutes.
Pour 350 ml of the reserved cherry juice into a saucepan, mix with the dessert glaze mix and sugar. Bring the glaze to a boil over medium heat, stirring constantly. Let the glaze cool slightly until it no longer steams but is still liquid enough to spread.
Remove the cake from the freezer, spread the glaze with a spoon starting from the center over the cream. Once the glaze has set, remove the cake ring. Press the chocolate shavings around the sides of the cake. Decorate with fresh cherries.
