Chocolate Chip Cookies


  • 1 cup of spelt or all purpose gluten free flour
  • 60g of ground almonds
  • 1 teaspoon of baking powder
  • r 1/2 teaspoon of bicarbonate soda
  • 1 teaspoon of cinnamon
  • 1 tbs of vanilla extract
  • 1/4 cup of coconut oil
  • 1/3 cup of agave syrup
  • 3/4 cup of dark chocolate chips


  1. Mix the flour, baking powder, bicarbonate soda, cinnamon, and ground almonds in a bowl until evenly combined

  2. In a separate bowl make sure the coconut oil is liquid but cooled and mix in the agave and vanilla until combined

  3. Add the wet and dry ingredients together until you have a cookie dough batter

  4. Then gently fold in the chocolate chips until evenly spread throughout the dough

  5. Take little scoops of the mixture and make balls with your hands and place on a well greased tray

  6. Flatten slightly and bake in the oven for around 10-12 minutes on 160 Middle shelf

  7. Checking they don't get burnt

  8. Leave to cool and enjoy
