Crunchy Country Home Fries

Ingredients

  • 3 lbs of little potatoes, halved
  • 1/2 tbs of baking soda
  • 1 1/2 tbs of salt
  • Salt/pepper to taste

Infused oil

  • 4 large garlic cloves, crushed
  • 1/3 cup of olive oil
  • 2 bay leaves
  • Handful of rosemary leaves
  • 1/2 tbs of whole black pepper

Preparation

  1. In a pot on medium-heat, add your potatoes, water to cover the potatoes, baking soda and salt.

  2. Cook for 20 minutes or until soft.

  3. While potatoes are cooking, in a pan on low heat, add garlic, olive oil, bay leaves, rosemary and whole black pepper.

  4. Cook infused oil for about 10 minutes or garlic turn brownish. Strain oil when done and set aside.

  5. Pre-heat the oven to 400F.

  6. Once potatoes are cooked, strain them and let them rest for 5 minutes.

  7. Coat potatoes in infused oil.

  8. Add potatoes on lined baked sheet.

  9. Bake for 30 minutes - halfway through move the potatoes a little and season with salt and pepper. Place back in the oven.

  10. Enjoy
