Fudgy Banana Cacao Bread

Ingredients

  • 1/4 cup coconut flour
  • 1/2 cup spelt flour
  • 1/4 cup regular flour
  • 2 tsp baking powder
  • 3 tbsp raw cacao powder
  • 2 tbsp coconut flower sugar
  • 3 eggs (substitute with flax eggs)
  • 3 ripe bananas
  • Oat milk

Preparation

  1. Preheat the oven to 190°C (375°F).

  2. In a large mixing bowl, combine the coconut flour, spelt flour, regular flour, baking powder, raw cacao powder, and coconut flower sugar.

  3. In a separate bowl, mash the ripe bananas until smooth.

  4. If using flax eggs as a substitute for regular eggs, prepare them by mixing 3 tablespoons of flaxseed meal with 9 tablespoons of water. Let it sit for a few minutes until it thickens.

  5. Add the eggs or flax eggs to the mashed bananas and mix well.

  6. Gradually incorporate the wet ingredients into the dry ingredients, mixing until just combined.

  7. If the batter seems too thick, you can add a splash of oat milk to achieve the desired consistency.

  8. Grease a loaf pan and pour the batter into it, smoothing the top with a spatula.

  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  10. Once baked, remove the bread from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
