Gluten Free Lemony Cookies with Jam


  • 125g butter
  • 125g sugar
  • 1 egg
  • 1 tbsp grated lemon rind
  • 180g gluten free flour blend
  • 60g custard powder
  • 1 tsp baking powder
  • blackberry or raspberry jam


  1. Cream butter, sugar and beat in lemon rind and egg. Add flour and baking powder, mix well and shape into balls on parchment paper

  2. Flatten dough and make indents with a finger in the shape of a heart

  3. Bake at 350°F for 15 to 20 mins

  4. Fill with jam and enjoy
