Granola Cups with Yogurt
Ingredients
- 2 cups oats
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 1/4 tsp vanilla
- dash of salt
Toppings
- dairy free yogurt
- strawberries
- raspberries
- blueberries
- blackberries
- mango
- kiwi
Preparation
To a large bowl, combine the oats, peanut butter, and maple syrup. Mix them well; it helps to use your hands.
Grab a muffin pan and lightly grease six muffin holes with coconut oil to make removal easier.
Split the granola filling evenly between the six muffin holes.
Use your hands or a spoon to shape the granola into little cups with a hollow middle.
Bake the granola cups in the oven for 20 minutes at 350°F or 175°C.
Allow the cups to cool for at least 30 minutes before removing them from the muffin pan to prevent them from falling apart.
Gently slide a butter knife along the edges to loosen the cups from the pan.
Remove the granola cups, fill them with yogurt, and add sliced fruit on top.
