Hasselback Potatoes

Ingredients

  • 4 medium potatoes scrubbed
  • 4 sprigs of fresh rosemary
  • some thyme
  • 1 teaspoon dried sage
  • 1 teaspoon salt

Preparation

  1. Preheat oven to 400 degrees

  2. Roast potatoes for 20 minutes

  3. Remove from oven and slit 8-10 slits across the potato-- 3/4 of the way through the flesh of the potato and slightly fan out

  4. Add rosemary, some thyme, 1 teaspoon dried sage and 1 teaspoon salt

  5. Return to the oven and bake for an additional 20-25 minutes, or until potatoes are fork tender
