Healthy Red Velvet Whoopie Pies

Ingredients

Cake

  • 1 3/4 cups all-purpose flour
  • 2 tbsp cacao powder
  • 1/2 cup cane sugar
  • 1 stick unsalted butter
  • 1 egg separated
  • 2 tbsp beetroot powder @suncorefoods
  • 1/2 cup almond milk mixed with 1 1/2 tsp vinegar (To make healthy plant-based buttermilk)
  • 1 tbsp freshly squeezed lemon juice
  • 1 1/2 tsp rice vinegar
  • 1 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda

Filling

  • 8 oz cream cheese

Preparation

  1. Preheat oven to 375°F and prep your baking sheets with parchment paper.

  2. Take a large bowl to beat the butter and sugar until the mixture turns fluffy.

  3. Separate your egg yolk and egg white.

  4. Then mix in the egg yolk to your butter mix. Then add the remaining wet ingredients and whisk until combined.

  5. Sift and add all the dry ingredients into the bowl. Mix until you get a nice smooth batter.

  6. Use a separate bowl to whip the egg white until it's fluffy and stiff. Fold it into the cake batter.

  7. Use a medium-sized cookie scoop to assemble the batter onto lined baking sheets.

  8. Place 36 scoops of batter approximately 2 inches apart.

  9. Bake for 12 minutes or until done.

  10. Let the cakes cool for half an hour before filling them with cream cheese.
