Hot Honeyed Brussels Sprouts with Udon Noodles
Ingredients
- 1 packet udon noodles
- 2 cups brussels sprouts
- 1 tablespoon honey
- 2 tablespoons olive oil
- 2 cups coriander roughly chopped
- 1 large clove garlic, minced
- 5 teaspoons toasted sesame oil
- 2 tablespoons rice vinegar
- 2 teaspoons tamari sauce
- 4 tablespoons toasted sesame seeds
- 3 teaspoons chilli flakes
- 4 spring onions
Preparation
Preheat the oven to 200°C and line baking tray with parchment paper.
Slice 1 cup of the brussels sprouts paper thin (mandoline works best) then toss them with the 1 teaspoon of the sesame oil and 1/4 teaspoon salt.
Massage the leaves with your hands until they glisten and spread out on half the baking tray.
Trim and halve the other cup of brussels sprouts.
In a large bowl stir together 2 tablespoons olive oil, 1 tablespoon honey and 1 teaspoon chilli flakes.
Toss in the sprouts and season, then stir until well combined and place on the other half of the baking tray.
Roast for 15 minutes until the edges are starting to go golden and set aside to cool.
Cook the noodles according to package instructions and drain well.
Add the garlic, vinegar, remaining sesame oil and tamari sauce to a large bowl and combine well.
Add the cooled brussels sprouts, coriander, toasted sesame seeds and toss well.
Toss the noodles with the greens and top with spring onions, chilli flakes and more sesame seeds.
