Moist Vegan Chocolate Cake

Ingredients

  • 1 300g package of soft tofu
  • 1 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • 2/3 cup sugar of choice
  • 1/4 cup unsweetened cocoa powder
  • 1 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp balsamic vinegar

Chocolate icing

  • 1 cup organic powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp vegan butter
  • 1 tsp vanilla extract
  • 1 tbsp non-dairy milk
  • 1/4 cup slivered almonds, toasted

Preparation

  1. Add tofu, milk, vanilla extract and balsamic vinegar in a blender and blend until smooth, scraping sides as you go.

  2. Add the rest of the ingredients and blend to a smooth batter.

  3. Pour into a greased 8x8 inch square or 9 inch round pan and bake at 350 degrees F for 30-35 minutes.

  4. Let cool completely and frost with the chocolate icing.

Chocolate icing

  1. Whip all ingredients together using a stand or hand mixer until smooth and fluffy.
