Moist Vegan Chocolate Cake Bites

Ingredients

  • cake:
  • 1 300g package of soft tofu @sunrisesoyafoods
  • 1 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • 2/3 cup sugar of choice (i like coconut palm sugar in these)
  • 1/4 cup unsweetened cocoa powder
  • 1 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp balsamic vinegar
  • instructions:
  • optional chocolate icing:
  • 1 cup organic powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp vegan butter
  • 1 tsp vanilla extract
  • 1 tbsp non-dairy milk
  • 1/4 cup slivered almonds, toasted

Preparation

  1. Add tofu, milk, vanilla extract & balsamic vinegar in a blender and blend until smooth, scraping sides as you go

  2. Add the rest of the ingredients and blend to a smooth batter

  3. Pour into a grease 8x8” square or 9” round pan and bake at 350 degree f for 30-35 minutes

  4. Let cool completely and frost with frosting recipe below

  5. Optional chocolate icing:

  6. Cup organic powdered sugar

  7. Tbsp unsweetened cocoa powder

  8. Tbsp vegan butter

  9. Tsp vanilla extract

  10. Tbsp non-dairy milk

  11. Cup slivered almonds, toasted

  12. Whip all ingredients together using a stand or hand mixer until smooth and fluffy
