Moist Vegan Chocolate Cake Bites
Ingredients
- cake:
- 1 300g package of soft tofu @sunrisesoyafoods
- 1 tbsp non-dairy milk
- 1 tsp vanilla extract
- 2/3 cup sugar of choice (i like coconut palm sugar in these)
- 1/4 cup unsweetened cocoa powder
- 1 cup flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp balsamic vinegar
- instructions:
- optional chocolate icing:
- 1 cup organic powdered sugar
- 2 tbsp unsweetened cocoa powder
- 1 tbsp vegan butter
- 1 tsp vanilla extract
- 1 tbsp non-dairy milk
- 1/4 cup slivered almonds, toasted
Preparation
Add tofu, milk, vanilla extract & balsamic vinegar in a blender and blend until smooth, scraping sides as you go
Add the rest of the ingredients and blend to a smooth batter
Pour into a grease 8x8” square or 9” round pan and bake at 350 degree f for 30-35 minutes
Let cool completely and frost with frosting recipe below
Optional chocolate icing:
Cup organic powdered sugar
Tbsp unsweetened cocoa powder
Tbsp vegan butter
Tsp vanilla extract
Tbsp non-dairy milk
Cup slivered almonds, toasted
Whip all ingredients together using a stand or hand mixer until smooth and fluffy
