Moist Vegan Chocolate Cake
Ingredients
- 1 300g package of soft tofu
- 1 tbsp non-dairy milk
- 1 tsp vanilla extract
- 2/3 cup sugar of choice
- 1/4 cup unsweetened cocoa powder
- 1 cup flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp balsamic vinegar
Chocolate icing
- 1 cup organic powdered sugar
- 2 tbsp unsweetened cocoa powder
- 1 tbsp vegan butter
- 1 tsp vanilla extract
- 1 tbsp non-dairy milk
- 1/4 cup slivered almonds, toasted
Preparation
Add tofu, milk, vanilla extract and balsamic vinegar in a blender and blend until smooth, scraping sides as you go.
Add the rest of the ingredients and blend to a smooth batter.
Pour into a greased 8x8 inch square or 9 inch round pan and bake at 350 degrees F for 30-35 minutes.
Let cool completely and frost with the chocolate icing.
Chocolate icing
Whip all ingredients together using a stand or hand mixer until smooth and fluffy.
