No-Bake Chocolate Covered Mini Doughnuts
Ingredients
- 50g dates
- 10g raw chocolate ( + 70g for coating )
- 1 tsp açaí powder
- 50g almonds
- 1 tsp coconut oil
- 1 tbsp coconut sugar ( optional )
- 1/2 tbsp peanut butter
- 10g pistachios
- 1/2 tsp matcha
- 1/2 tbsp coconut sugar
Preparation
In a food processor, process the dates, chocolate, açaí powder, almonds, coconut oil & sugar, and peanut butter until a dough forms.
Put the dough in the mini doughnut tray and stick it in the fridge to set.
In the meantime, melt the chocolate over a bain marie.
Put the pistachios, matcha powder and coconut sugar in a food processor and pulse a couple of times until crumbly.
Remove the doughnuts from the tray, cover with chocolate and sprinkle with pistachio matcha crumbs.
Store in the fridge.
