Out of This World Galaxy Cupcakes
Ingredients
Cupcake batter
- 150 ml neutral cooking oil (e.g., sunflower oil)
- 150 g natural yogurt
- 2 eggs (medium)
- 160 g sugar
- 180 g wheat flour (Type 405)
- 2 tbsp cocoa powder
- 2 tsp baking powder
- a pinch of salt
- 100 g chocolate chips
Frosting and decoration
- 250 g soft butter (room temperature)
- 250 g powdered sugar
- 1 tsp vanilla sugar
- food coloring in blue, purple, and black
- 2 tbsp edible silver sugar decorations - stars
Preparation
For the cupcake batter, mix cooking oil with yogurt, eggs, and sugar. Preheat oven to 180°C conventional (160°C fan). Mix flour with cocoa powder, baking powder, and salt, then add to the rest of the batter and mix. Fold in chocolate chips. Line a muffin tin (12 cups) with cupcake liners
Using an ice cream scoop, distribute the batter into the liners. Bake the cupcakes in the preheated oven for about 25-30 minutes. Let the cupcakes cool completely, then remove from the pan
For the frosting, beat butter with powdered sugar and vanilla sugar for at least 4 minutes until creamy and lighter in color. Divide the frosting into 3 bowls. Add a different food coloring to each bowl and mix well. Stretch a piping bag with a star tip over a measuring cup
Prepare a large piece of plastic wrap on a board. Spread the black colored frosting in a strip on the plastic wrap. Place the blue frosting next to it, and repeat with purple frosting. With your hands, fold the plastic wrap from one side so that the frosting strips are rolled together without the plastic wrap being wrapped inside
Leave one end of the rolled frosting snake open or cut it open, and twist the other end closed. Insert the open end down into the piping bag and twist the top closed. Pipe the frosting onto the cooled cupcakes in spiral motions
Decorate the cupcakes with edible silver stars or other decorations. Store the cupcakes under a cake dome in the refrigerator until serving
