Oven-Baked Crispy Fries with Guacamole

Ingredients

  • 4 large baking potatoes
  • 1.5 tablespoons olive oil
  • salt & pepper
  • a sprinkle of paprika

Guacamole

  • 3 avocados
  • 1 firm tomato, finely diced
  • 1/2 white onion
  • 1/2 cup chopped cilantro
  • 2 tbsp fresh lemon or lime juice
  • Optional salt and pepper to taste

Preparation

  1. Preheat oven to 400.

  2. Wash potatoes leaving skin on (you can peel them if you prefer).

  3. Fill a bowl with cold water.

  4. Slice potatoes into 3-4 slices length wise and then into strips.

  5. Let potatoes soak in cold water for at least 30 minutes (this removes starch from the potato resulting in crispier french fries).

  6. Remove from water and pat dry.

  7. Toss with oil and seasoning.

  8. Bake for 30 minutes.

  9. Turn fries and bake for an additional 10-15 minutes.

  10. Mash the avocados in a bowl

  11. Add the diced tomato, chopped onion, cilantro, and lemon or lime juice

  12. Mix until well combined and season with salt and pepper to taste if desired
