Oven Baked Crispy Fries and Guacamole

Ingredients

Fries

  • 4 large baking potatoes
  • 1.5 tablespoons olive oil
  • salt and pepper
  • a sprinkle of paprika

Guacamole

  • 3 avocados
  • 1 firm tomato
  • 1/2 white onion
  • 1/2 cup cilantro
  • 2 tablespoons fresh lemon or lime juice
  • Optional: salt and pepper to taste

Preparation

Fries

  1. Preheat oven to 400.

  2. Wash potatoes leaving skin on (you can peel them if you prefer).

  3. Fill a bowl with cold water.

  4. Slice potatoes into 3-4 slices lengthwise and then into strips.

  5. Let potatoes soak in cold water for at least 30 minutes to remove starch for crispier fries.

  6. Remove from water and pat dry.

  7. Toss with oil and seasoning.

  8. Bake for 30 minutes.

  9. Turn fries and bake for an additional 10-15 minutes.

Guacamole

  1. Open the avocados and scoop out the flesh by cutting lengthwise around the pit, striking the pit with a knife, twisting to remove it, and scooping out the flesh.

  2. Mash the flesh with a fork to your desired consistency.

  3. Stir in the tomato, onion, cilantro, lemon or lime juice, and optional salt and pepper.

  4. Enjoy!
