Protein Pancakes with Almond Butter

Ingredients

  • 1/3 cup buckwheat flour
  • 1 Vega One Coconut Almond protein powder pack
  • 1 cup almond milk
  • 2 liquid egg whites
  • 1/2 tablespoon baking powder

Toppings

  • 1 packet (2 tablespoons) of Justin's almond butter

Preparation

  1. In a mixing bowl, combine the buckwheat flour, protein powder, and baking powder.

  2. In another bowl, whisk together the almond milk and egg whites.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a non-stick skillet or griddle over medium heat.

  5. Pour batter onto the skillet to form small pancakes and cook until bubbles form, then flip and cook until golden brown.

  6. Serve the pancakes with the almond butter topping.
