Pili Nut Cheese and Spinach Boreks

Ingredients

  • 200g Pili nut cheese
  • Gluten-free filo pastry sheets
  • 1 kg cooked spinach
  • 1 red onion, finely chopped and cooked
  • Salt and pepper to taste
  • Flax seed egg white mixture with lemon juice and sparkling water

Preparation

  1. Take two filo pastry sheets and lay on a flat surface

  2. Spread the egg white substitute with fingers or brush

  3. In a bowl combine pili nut cheese, cooked spinach and red onions

  4. Use salt and pepper to season to taste

  5. Start spreading filling on the filo sheets

  6. Once spread out, make a roll and spiralize into a bun shape

  7. Do the same for the rest

  8. Place them in the oven and bake at 180°C for 40 minutes
