Pumpkin Pie Cupcakes
Ingredients
- 1 of cup pureed pumpkin
- 1/3 cup of coconut oil
- 1 cup of coconut sugar
- 1/4 cup rice milk
- 1 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1 tsp of ground cinnamon
- 1 tsp of nutmeg
- 1/2 of ground ginger
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 cup of dark chocolate espresso chips (if you don't find any just add 1 tsp of ground espresso beans to 1/2 cup dark chocolate chips)
Preparation
Combine first five ingredients in a large bowl, next combine remaining ingredients in a separate large bowl
Gradually combine dry ingredients into wet ingredients, gently stir to combine ingredients, but do not over stir
Preheat oven to 350 °, use your desired cupcake forms, fill forms about 2/3 full
Bake cupcakes for about 22-24 minutes, test with toothpicks they should be plump to the touch
Remove and allow to cool for 5 minutes use desired frosting or garnish with left over chocolate, melt, and drizzle❤? #threebunnies ???
