Pumpkin Pie Cupcakes


  • 1 of cup pureed pumpkin
  • 1/3 cup of coconut oil
  • 1 cup of coconut sugar
  • 1/4 cup rice milk
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1 tsp of ground cinnamon
  • 1 tsp of nutmeg
  • 1/2 of ground ginger
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 cup of dark chocolate espresso chips (if you don't find any just add 1 tsp of ground espresso beans to 1/2 cup dark chocolate chips)


  1. Combine first five ingredients in a large bowl, next combine remaining ingredients in a separate large bowl

  2. Gradually combine dry ingredients into wet ingredients, gently stir to combine ingredients, but do not over stir

  3. Preheat oven to 350 °, use your desired cupcake forms, fill forms about 2/3 full

  4. Bake cupcakes for about 22-24 minutes, test with toothpicks they should be plump to the touch

  5. Remove and allow to cool for 5 minutes use desired frosting or garnish with left over chocolate, melt, and drizzle❤? #threebunnies ???
