Roasted Golden Beet Curry
Ingredients
- 1 large golden beet (about 4 cups chopped)
- 1 medium yellow onion
- 3 cloves garlic
- 1 box soft tofu
- 2-4 cups vegetable broth
- 1 tablespoon soy sauce
- 1-2 teaspoons curry powder
- 1/2 teaspoon turmeric
- 1 tablespoon fresh minced ginger or 1 teaspoon dry ground
- 14 ounces coconut milk
Preparation
Preheat oven to 400 F.
Peel and dice beet.
Peel and rough chop onion.
Peel and leave garlic whole.
Lay all on parchment lined baking sheet.
Bake for 45 min.
After roasting, transfer to a pot with all ingredients except coconut milk.
Bring to a simmer and cook for 15 min.
Add in coconut milk.
Purée using a blender or immersion blender, when blending hot liquids make sure to remove the center plug on your blender top.
Bring back to simmer and serve.
