Winter Warming Butternut Curry Soup

Ingredients

  • 1 butternut pumpkin, diced
  • 1/2 onion (finely sliced)
  • 2 cloves garlic
  • 1/2 tbsp extra virgin olive oil
  • 1 tbsp curry powder
  • 2 tsp paprika
  • Salt and pepper to taste
  • 1/2 tin coconut milk
  • 2 cups vegetable broth

Preparation

  1. Heat a pan over a medium heat.

  2. Once hot, add oil, garlic and onions, fry off until softened.

  3. Add pumpkin, curry, paprika and some salt and pepper to taste, mix through with the onions and garlic. Cover and leave to cook until the pumpkin begins to soften.

  4. Pour in broth and coconut milk and cook until lightly boiling. Cover again and cook on a low heat until the pumpkin is well done.

  5. Transfer the soup to a food processor and blend until creamy and smooth, taste and add more salt, curry and pepper to taste.

  6. Pour into bowls, top with drizzles of coconut milk or cream, plenty of @topthat_mealtoppers cheesy chilli tahini toppers and serve with warm bread for dipping.
