Creamy Vegan Coconut Lentil Soup

Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ginger
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  1. Sauté diced onion and minced garlic until softened

  2. Stir in curry powder, cumin, turmeric, paprika, and ginger; cook for 1 minute

  3. Add red lentils, vegetable broth, and coconut milk; bring to a boil

  4. Reduce heat and simmer until lentils are tender, about 15-20 minutes

  5. Season with salt and pepper to taste

  6. Garnish with fresh cilantro before serving
