Creamy Vegan Coconut Lentil Soup
Ingredients
- 1 cup red lentils
- 1 can coconut milk
- 2 cups vegetable broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon ginger
- Salt and pepper to taste
- Fresh cilantro for garnish
Preparation
Sauté diced onion and minced garlic until softened
Stir in curry powder, cumin, turmeric, paprika, and ginger; cook for 1 minute
Add red lentils, vegetable broth, and coconut milk; bring to a boil
Reduce heat and simmer until lentils are tender, about 15-20 minutes
Season with salt and pepper to taste
Garnish with fresh cilantro before serving
