Hearty Vegan Lentil Soup
Ingredients
- 1 cup red lentils, rinsed and drained
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional)
Preparation
In a large pot, sauté the onion and garlic in a little bit of oil until softened.
Add the carrots and celery and cook for a few minutes until they start to soften.
Add the vegetable broth, lentils, tomatoes, cumin, turmeric, smoked paprika, salt, and black pepper. Stir everything together.
Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes or until the lentils are tender.
Serve hot with chopped fresh parsley, if desired.
Tips
It's easy to customize with your favorite vegetables and herbs.
You can even add some cooked rice or quinoa for extra nutrition.
