Hearty Spiced Lentil Soup
Ingredients
- 1/2 onion finely chopped
- 3 garlic cloves minced
- 3 carrots finely chopped
- 3 stalks celery finely chopped
- 1 bay leaf
- 1.5 cups brown lentils
- 4 cups vegetable broth
- 1 can full fat coconut milk
- 1 can diced tomatoes (~14 ounce can)
- salt/pepper to taste
- 1 tbsp tomato paste
- 1 tbsp miso or liquid aminos
- 1 tbsp harissa or sub more tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1 tbsp italian seasoning blend
- juice from 1 lime
- 1/2 cup finely chopped cilantro or parsley
Preparation
Heat oil in a pot over medium heat. Sauté onions, garlic, carrots and celery for 6 minutes. If using instant pot use the sauté function for 6 minutes.
Add remaining ingredients and simmer for 20-30 minutes or until lentils are cooked through. If you are using the instant pot cook on high pressure for 15 minutes and let the instant pot natural release for 10 minutes.
Serving suggestions
Serve with desired toppings (I like coconut yogurt and pumpkin seeds).
