Vegan Sweet Potato and Black Bean Soup

Ingredients

  • 1 pepper diced
  • 1 onion diced
  • olive oil
  • 3 cups chopped sweet potatoes
  • 1 15 ounce can of corn
  • 1 15 ounce can of black beans
  • 1 15 ounce can of diced tomatoes
  • 4 cups of veggie broth
  • 1 1/2 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp Chipotle powder
  • 1/2 tsp salt
  • 1 can full fat coconut milk

Preparation

  1. Turn your instant pot to sauté mode and add the onion and pepper, sauté for 5 minutes in olive oil.

  2. Add in everything else and stir together.

  3. Lock the lid on and pressure cook on high for 4 minutes.

  4. Let sit for 5 minutes then quick release.

  5. Add the coconut milk in and stir.

  6. Serve with tortillas, avocado, salsa, or whatever you want.
