Vegan Sweet Potato Lentil Chili
Ingredients
- 2 small sweet potatoes, cubed
- 1 pepper, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves of garlic
- 1 15 ounce can of black beans
- 1 15 ounce can chili beans
- 1/2 cup dry red lentils
- 28 ounce can diced tomatoes
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp coconut sugar
- 1 tsp oregano
- 1/4 tsp cayenne pepper
- 1 1/2 cups veggie broth
- 2 tbsp tomato paste
- Salt and pepper
Preparation
Sauté the onions, pepper, garlic, and sweet potatoes for about 5 minutes.
Add in the black beans, chili beans, red lentils, diced tomatoes, cumin, chili powder, garlic powder, onion powder, coconut sugar, oregano, cayenne pepper, veggie broth, and tomato paste. Make sure to drain the beans and tomatoes before adding.
Stir the ingredients together until well combined.
Lock the lid of the instant pot and cook on the chili/beans setting for 15 minutes.
After cooking, let the pressure release naturally for 5 minutes before opening the lid.
Season with salt and pepper to taste.
Serve the chili hot and enjoy!
