Best Healthy Veggie Soup

Ingredients

  • 2 tbsp olive oil
  • 1 cup diced onion
  • 2 cups diced carrots
  • 1 cup diced celery
  • 5 cups veggie broth
  • 1 15 oz can diced tomatoes
  • 1 cup cut up green beans
  • 1 cup chopped kale
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup parsley
  • 2 cups cooked brown lentils
  • 2 cups cooked jasmine rice

Preparation

  1. In a large soup pot, sauté onion, celery and carrots in olive oil for 5 minutes.

  2. Add in green beans, veggie broth, tomatoes, pepper, salt and parsley and simmer for 20 minutes.

  3. Add in kale and let it wilt for 2 minutes.

  4. Add in cooked lentils and cooked rice, and serve with your favorite crusty bread.
