Best Healthy Veggie Soup
Ingredients
- 2 tbsp olive oil
- 1 cup diced onion
- 2 cups diced carrots
- 1 cup diced celery
- 5 cups veggie broth
- 1 15 oz can diced tomatoes
- 1 cup cut up green beans
- 1 cup chopped kale
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup parsley
- 2 cups cooked brown lentils
- 2 cups cooked jasmine rice
Preparation
In a large soup pot, sauté onion, celery and carrots in olive oil for 5 minutes.
Add in green beans, veggie broth, tomatoes, pepper, salt and parsley and simmer for 20 minutes.
Add in kale and let it wilt for 2 minutes.
Add in cooked lentils and cooked rice, and serve with your favorite crusty bread.
