Cozy Vegan Vegetable Soup

Ingredients

  • 1/2 yellow onion diced
  • 1.5 cups chopped carrots
  • 1 cup chopped celery
  • 1 tbsp olive oil
  • 2 15 oz cans cannellini beans (white beans)
  • 4 cups veggie broth
  • 1/8 tsp pepper
  • 1 tsp salt
  • 1 tbsp dried dill
  • 1 tsp dried thyme
  • handful fresh spinach

Add-ins

  • 2 cups cooked rice or pasta

Preparation

  1. In a soup pot on medium heat, sauté veggies in olive oil for 5 to 10 minutes.

  2. Add in beans, spices, and veggie broth then simmer for 25 minutes.

  3. Add in fresh spinach at the end and stir until wilted.

  4. Add in cooked rice or pasta.

Tips

  1. Do not cook the rice in the soup because it will soak up all the broth and get starchy.
