One-Pot Broccoli Cheddar Soup

Ingredients

  • 1 medium white onion
  • 4 medium carrots
  • 3-4 celery stalks
  • 2 teaspoons garlic powder
  • 1/4 cup dairy-free butter
  • 1/3 cup all-purpose flour
  • 3 cups vegetable broth
  • 1 cup unsweetened dairy-free milk
  • 3 cups dairy-free cheddar cheese
  • 5 cups broccoli
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika

Preparation

  1. Melt the dairy-free butter in a large pot over medium heat.

  2. Add the onion, carrots, and celery, then sauté until softened.

  3. Stir in the garlic powder and flour, cooking to form a roux.

  4. Gradually add the vegetable broth and dairy-free milk, stirring until smooth.
