One-Pot Broccoli Cheddar Soup
Ingredients
- 1 medium white onion
- 4 medium carrots
- 3-4 celery stalks
- 2 teaspoons garlic powder
- 1/4 cup dairy-free butter
- 1/3 cup all-purpose flour
- 3 cups vegetable broth
- 1 cup unsweetened dairy-free milk
- 3 cups dairy-free cheddar cheese
- 5 cups broccoli
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon paprika
Preparation
Melt the dairy-free butter in a large pot over medium heat.
Add the onion, carrots, and celery, then sauté until softened.
Stir in the garlic powder and flour, cooking to form a roux.
Gradually add the vegetable broth and dairy-free milk, stirring until smooth.
Mix in the broccoli, dairy-free cheddar cheese, salt, pepper, and paprika.
Simmer until the broccoli is tender and the soup is heated through.
Serve hot.
