One-Pot Broccoli and Cheddar Soup
Ingredients
- 1 medium white onion
- 4 medium carrots
- 3-4 celery stalks
- 2 tsp garlic powder
- 1/4 cup dairy-free butter
- 1/3 cup all-purpose flour
- 3 cups vegetable broth
- 1 cup unsweetened dairy-free milk
- 3 cups dairy-free cheddar cheese
- 5 cups broccoli
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp paprika
Preparation
Chop the onion and celery into small pieces and shred the carrots using a cheese grater.
Chop the broccoli into bite-sized pieces.
In a large pot, melt the dairy-free butter over medium heat.
Add the chopped onion, shredded carrots, and chopped celery; sauté until softened, about 5 minutes.
Stir in garlic powder, salt, pepper, and paprika.
Add flour and cook, stirring constantly, for 1-2 minutes to form a roux.
Gradually whisk in vegetable broth and dairy-free milk to avoid lumps.
Bring the mixture to a boil, then reduce heat and simmer.
Add the chopped broccoli and cook until tender, about 10 minutes.
Stir in dairy-free cheddar cheese until fully melted and smooth.
Serve hot.
