One-Pot Broccoli and Cheddar Soup

Ingredients

  • 1 medium white onion
  • 4 medium carrots
  • 3-4 celery stalks
  • 2 tsp garlic powder
  • 1/4 cup dairy-free butter
  • 1/3 cup all-purpose flour
  • 3 cups vegetable broth
  • 1 cup unsweetened dairy-free milk
  • 3 cups dairy-free cheddar cheese
  • 5 cups broccoli
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp paprika

Preparation

  1. Chop the onion and celery into small pieces and shred the carrots using a cheese grater.

  2. Chop the broccoli into bite-sized pieces.

  3. In a large pot, melt the dairy-free butter over medium heat.

  4. Add the chopped onion, shredded carrots, and chopped celery; sauté until softened, about 5 minutes.

  5. Stir in garlic powder, salt, pepper, and paprika.

  6. Add flour and cook, stirring constantly, for 1-2 minutes to form a roux.

  7. Gradually whisk in vegetable broth and dairy-free milk to avoid lumps.

  8. Bring the mixture to a boil, then reduce heat and simmer.

  9. Add the chopped broccoli and cook until tender, about 10 minutes.

  10. Stir in dairy-free cheddar cheese until fully melted and smooth.

  11. Serve hot.
