Vegan Wild Rice Soup

Ingredients

  • 100% Wild Rice
  • Vegetable Stock
  • Old Bay seasoning
  • Bay leaf
  • 1 15 oz can coconut milk
  • Salt and pepper

Autumn vegetables

  • Sweet potato
  • Carrots
  • Celery
  • Onion
  • Baby bella mushrooms
  • Garlic

Greens

  • Kale, baby spinach or collard greens

Preparation

  1. Simmer the base soup ingredients including veggies, rice, broth, and seasonings until the rice is cooked and tender.

  2. During the last 10 minutes of cooking, prepare the cream sauce in a separate saucepan by melting butter, whisking in flour, stirring in milk, and cooking until thickened. Alternatively, use a can of coconut milk.

  3. Add the cream sauce and greens, stir to combine, then taste and season with salt and pepper as needed.

Serving suggestions

  1. Serve warm, preferably with crusty bread, oyster crackers, or other accompaniments.
