Butternut Squash Soup

Ingredients

  • 1 butternut squash
  • 1 onion
  • 4 cloves of garlic
  • 400ml veg stock
  • 200ml coconut milk

Preparation

  1. Pre heat oven to 180’C fan

  2. Cut butternut squash into chunks, toss in oil, salt and pepper, place on a tray and put in the oven

  3. After 30mins add crushed garlic cloves and roughly chopped onion on the same tray and cook for a further 30mins

  4. Make up 400ml of veg stock

  5. Take out veg and place into a saucepan over low heat with veg stock, coconut milk and seasoning and blitz with a hand blender and heat through
