Butternut Squash Soup
Ingredients
- 1 butternut squash
- 1 onion
- 4 cloves of garlic
- 400ml veg stock
- 200ml coconut milk
Preparation
Pre heat oven to 180’C fan
Cut butternut squash into chunks, toss in oil, salt and pepper, place on a tray and put in the oven
After 30mins add crushed garlic cloves and roughly chopped onion on the same tray and cook for a further 30mins
Make up 400ml of veg stock
Take out veg and place into a saucepan over low heat with veg stock, coconut milk and seasoning and blitz with a hand blender and heat through
