Curried Potatoes with Zucchini and Coconut Milk

Ingredients

  • 2 tbsp olive oil
  • 1 small onion
  • 2-3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1/2 tbsp paprika
  • 1 tsp turmeric powder
  • 4 large potatoes or 6 smaller
  • 1/2 small zucchini, crescent cut
  • 1 can coconut milk
  • salt to taste
  • greens for garnish

Preparation

  1. dice the onion and set aside.

  2. peel the potatoes and cut them into cubes.

  3. in a large skillet, heat up the olive oil over medium heat.

  4. add the diced onions and sauté for 3-4 minutes.

  5. add the garlic and all of the spices, and cook for about 1 minute.

  6. add the coconut milk, stir well, and add the potatoes.

  7. reduce the heat to low and cover with a lid.

  8. let the potatoes simmer for about 30-35 minutes (depending on the size of the potato cubes), checking and stirring them every once in a while - add in zucchini 10 minutes before its done.

  9. taste it to see if you like the amount of salt and spice!

  10. enjoy mixed in with rice (pictured) or on its own!
