Vegan Coconut Lentil Soup

Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ginger
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  1. Dice the onion and mince the garlic

  2. In a large pot, sauté the onion and garlic over medium heat until softened

  3. Add the curry powder, cumin, turmeric, paprika, and ginger, stirring for one minute to release aromas

  4. Stir in the red lentils, vegetable broth, and coconut milk

  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender

  6. Season with salt and pepper to taste

  7. Garnish with fresh cilantro before serving
