Spatchcock Peri Peri Chicken

Ingredients

  • medium whole chicken
  • for the marinade:
  • 1 cup greek yogurt
  • 6 cloves garlic
  • 1 fresh green chilli
  • 2 tablespoons smoked paprika
  • 1.5 teaspoons ground coriander
  • 0.5 teaspoons chilli powder
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1.5 tablespoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoons black pepper
  • 1.5 teaspoons apple cider vinegar

Preparation

  1. Pre heat fan oven to 220c whilst you spatchcock the chicken and make the marinade

  2. Put the garlic, green chilli, yogurt and lemon into and blender and whizz until smooth

  3. Pour into a medium sized mixing bowl, add the olive oil and the rest of the ingredients and stir well

  4. Use a pastry brush to brush the chicken all over with the marinade ( both sides) put the rest of the marinade aside for basting later

  5. Put the chicken in a baking tray breast-side down and roast for 20 minutes and then turn breast-side up

  6. Put back in the oven for 20 minutes, then brush the remaining marinade liberally over the top

  7. Put the chicken back in the oven for 15 minutes, more if needed depending on the weight of your chicken

  8. Remove from the oven, check juices run clear, baste the juices over the top and leave to rest for at least 10 mins before carving ❤️
