Vegan Cashew Mozzarella Pizza
Ingredients
Dairy-free mozzarella
- 1 cup cashews
- 1 T fresh lemon juice
- 2 Tbsp nutritional yeast
- 2 tsp agar powder
- 2 T tapioca powder
- 1 tsp onion powder
- 1 tsp garlic powder
- Organic vegetable seasoning cubes, to taste
- 2 T melted coconut oil
- 1 cup water
Pizza crust
- 3 cups flour
- 2 1/4 tsp active dry yeast
- 1 T coconut sugar
- 3/4 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried Italian seasoning
- 1 T vegetable stock seasoning
- 2 T olive oil
- 1 cup warm water
Preparation
Dairy-free mozzarella
Blend all ingredients in a blender, scraping down the sides
Place the thick liquid in a pot and simmer, stirring continuously, until thickened (about 5 minutes)
Taste and adjust seasonings if needed
Pizza crust
Add yeast to warm water, then add sugar, stir briefly, and let sit in a warm place
Add remaining ingredients to a large bowl
Add olive oil and the yeast mixture, adding more flour if too runny or more water if too doughy
Roll out the dough
Keeping an inch away from the edge, line the circle with the cheese
Fold the edge over the cheese, tucking or forking it into the crust
Top with marinara sauce, toppings, and remaining cheese, and bake at 350°F for 20 minutes

Proof the yeast mixture in a warm spot, such as in sunlight
