Vegan Orange and Honey Cake

Ingredients

  • 10 tablespoons (1 1/4 sticks) vegan butter, softened
  • 1 cup granulated sugar
  • Grated rind and juice 1 orange
  • 2 tablespoons clear honey
  • 3 tablespoons marmalade
  • 3 vegan eggs, beaten
  • 2/3 cup brown rice flour
  • 1 teaspoon gluten-free baking powder
  • 1/2 polenta

Preparation

  1. Preheat the oven to 325°F. Grease and line an 8-inch square, deep baking pan. Place the butter and sugar in a large bowl, then beat until light and fluffy. Whisk together the orange rind and juice, honey marmalade, and eggs then beat into the creamed butter mixture, adding a little of the flour if the mixture curdles.

  2. Stir in the remaining ingredients, then spoon into the prepared pan and place in the Preheated oven for about 1 hour, until just firm in the middle. Remove the cake from the oven and transfer to a wire rack to cool.
