Vegan Roasted Asparagus and Potatoes

Ingredients

  • 600 g potatoes
  • 400 g green asparagus
  • 2-3 tbsp oil
  • salt and pepper
  • 1 smashed garlic clove
  • juice of 1 lemon
  • crumbled feta cheese

Preparation

  1. Preheat oven to 200 °C.

  2. Cut 600 g of potatoes and 400 g of green asparagus into chunks.

  3. In a large bowl combine 2-3 tbsp oil, salt and pepper, 1 smashed garlic clove, and juice of 1 lemon.

  4. Add potatoes and asparagus to the bowl and mix well.

  5. Bake the potatoes for about 20 minutes.

  6. Flip, add asparagus and crumbled feta cheese, and bake for 15 minutes more until golden and crispy.

  7. Serve with your favorite dip.
