Vegan Cajun Polenta Potatoes
Ingredients
- 4 peeled and chopped potatoes
- 3 tablespoons Cajun spice
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1/2 cup polenta
- Salt
Preparation
Add potatoes to a pot of cold water. Add a pinch of salt and bring to a boil. Cook for 7-8 minutes until potatoes are parboiled.
Drain potatoes and toss them with Cajun spice, lemon juice, olive oil, salt, and polenta.
Transfer to a baking tray and roast in a preheated oven at 180°C for 30 minutes until crispy.
