Vegan Cajun Polenta Potatoes

Ingredients

  • 4 peeled and chopped potatoes
  • 3 tablespoons Cajun spice
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1/2 cup polenta
  • Salt

Preparation

  1. Add potatoes to a pot of cold water. Add a pinch of salt and bring to a boil. Cook for 7-8 minutes until potatoes are parboiled.

  2. Drain potatoes and toss them with Cajun spice, lemon juice, olive oil, salt, and polenta.

  3. Transfer to a baking tray and roast in a preheated oven at 180°C for 30 minutes until crispy.
