Cajun Spiced Potato Wedges with Avocado Dip

Ingredients

Wedges

  • 2 large potatoes
  • olive oil
  • Cajun spice mix
  • nutritional yeast (optional)
  • salt

Avocado dip

  • 1 ripe medium avocado
  • juice of 1/2 a lime
  • salt and pepper or dried chilli flakes

Preparation

Wedges

  1. Preheat the oven to 200C/180C fan/400F/gas 6 and line a baking tray with nonstick parchment.

  2. Cut the potatoes into wedges and place them in a mixing bowl.

  3. Drizzle the wedges with olive oil and stir well.

  4. Coat the wedges with desired amount of Cajun spice, sprinkle with nutritional yeast for extra crispiness, and season with salt.

  5. Stir until fully coated with the seasoning.

  6. Place the wedges on the baking tray and bake for 25-30 minutes until golden and crispy.

Avocado dip

  1. Mash the avocado until smooth and creamy, add the juice of 1/2 a lime, season with salt and pepper or dried chilli flakes, and mix well.
