Spiced Potato Wedges with Guacamole

Ingredients

  • 1kg potatoes (Charlotte variety)
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp chilli powder
  • 5-6 garlic cloves
  • Olive oil (generous drizzle)
  • Salt and pepper to taste

Guacamole

  • 1 ripe avocado
  • 1 spring onion
  • Juice of 1/2 lime
  • Small handful of wild garlic
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 200 degrees Celsius.

  2. Add the potato wedges to a large baking tray.

  3. Add all the spices, seasonings, and a generous drizzle of olive oil.

  4. Toss the potatoes to ensure they are evenly coated.

  5. Add the garlic cloves with skin on.

  6. Roast in the oven for 25-30 minutes until the potatoes are cooked and slightly crispy on the edges.

  7. Mash the avocado with a fork.

  8. Mix in the spring onion, lime juice, wild garlic, salt, and pepper to make the guacamole.

  9. Serve the potato chips with the guacamole and squeeze out the pulp from the garlic cloves.
