Spiced Potato Wedges with Guacamole
Ingredients
Potatoes
- 1 kg potatoes (Charlotte variety)
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp chilli powder
- 5-6 garlic cloves
- Olive oil (generous drizzle)
- Salt and pepper to taste
Guacamole
- 1 ripe avocado
- 1 spring onion
- Juice of 1/2 lime
- Small handful of wild garlic
- Salt and pepper to taste
Preparation
Cut the potatoes into wedges.
Preheat the oven to 200 degrees Celsius.
Place the potato wedges in a large baking tray.
Add the smoked paprika, garlic powder, chilli powder, salt, pepper, and a generous drizzle of olive oil.
Toss the potatoes to ensure even coating.
Add the garlic cloves with skin on.
Roast in the oven for 25-30 minutes until cooked and slightly crispy on the edges.
Mash the avocado with a fork for the guacamole.
Mix in the spring onion, lime juice, wild garlic, salt, and pepper.
Tips
Serve the potato wedges with the guacamole and squeeze out the pulp from the roasted garlic cloves to enjoy.
