Cajun Spiced Potato Wedges with Avocado Dip
Ingredients

- 2 large potatoes
- olive oil
- Cajun spice mix
- nutritional yeast (optional)
- salt
Avocado dip
- 1 ripe medium avocado
- juice of 1/2 a lime
- salt and pepper
- dried chilli flakes (optional)
Preparation
Wedges
Preheat oven to 200C/180C fan/400F/gas 6 and line a baking tray with non-stick parchment.
Cut the potatoes into wedges and place them in a mixing bowl.
Drizzle the wedges with a little olive oil and stir well.
Coat the wedges with desired amount of Cajun spice, sprinkle with nutritional yeast for extra crispiness and cheesy flavor, and season with salt.
Stir thoroughly with a wooden spoon until fully coated.
Place the wedges on the baking tray and bake in the preheated oven for 25-30 minutes until golden and crispy.
Avocado dip
Mash 1 ripe medium avocado until smooth and creamy.
Add the juice of 1/2 a lime.
Season with salt and pepper or some dried chilli flakes.
Mix well.
